Stove-Top Greek Lemon Potatoes

Ingredients

  • 2 pounds small new potatoes
  • 3 tablespoons extra virgin Greek olive oil
  • 1 tablespoon butter
  • 1/2 cup dry white wine
  • Juice of 1 large lemon
  • Greek sea salt to taste
  • 2 tablespoons fresh rosemary leaves or 2 teaspoons dried
  • 2 teaspoons dried Greek wild thyme or oregano

Instructions

  1. Place potatoes in a saucepan with olive oil, butter, wine, lemon juice, and salt. Bring to a boil, then cover and cook over high heat for 8 minutes.
  2. Reduce heat and continue cooking for about 20 minutes to brown the potatoes.
  3. Add herbs and cook for a few more minutes, stirring occasionally. Remove and serve
