Greek Goddess Cabbage Salad
I’ve unleashed my inner Greek goddess for you, dear friends, with this Mediterranean-inspired Green Goddess Cabbage Salad! 🌿🥗I think of this as an update to the popular Greek lahanosalata, or shredded cabbage salad, that’s a winter classic.
I crave salads daily, a healthy habit that comes with living in Greece and Ikaria, where salads are part of every meal. It’s also really fun to get creative with simple everyday veggies like cabbage. This Greek twist on the classic Green Goddess Salad is it! I’ve packed it with crisp cabbage, aromatic herbs, and a creamy yogurt dressing.

Strained fresh juice of two lemons

Combine the chopped cabbage, green onions, and chives in a large mixing bowl. Toss to combine.

In the bowl of a food processor or high-speed blender, add the basil, spinach, garlic, yogurt, olive oil, walnuts, lemon juice, cider vinegar, and sea salt. Process for a few minutes or until the herbs and spinach have broken down and the mixture is combined and smooth.
