Wheatberry Salad With Pomegranate And Apple
WHEATBERRY NUTRITION: Wheat berries are a whole grain, nutrient-dense food. Whole grains are high in fiber and essential nutrients, such as iron, zinc, magnesium, selenium, and B vitamins.

Ingredients
- 3 cups of water
- 1 cup wheatberries
- 2 stalks of celery finely chopped
- 3/4 cup pomegranate seeds
- 1/2 cup pineapple chopped
- 1 spring onion white and green parts, finely chopped
- 1/2 cup parsley leaves finely chopped
- 3 Tbsp extra virgin Greek olive oil
- 2 Tbsp lemon juice
- Salt and freshly ground black pepper
Instructions

In a large pot, bring the three cups of water to a boil and add the wheat. Cook uncovered for 1 hour or until tender. Drain and let cool.

In a large bowl, combine the drained, cooked wheatberries, celery, pomegranate, pineapple, spring onions, parsley, olive oil, and lemon juice. Season to taste with salt and pepper and serve.
