Viral Greek Pasta with Herbs and Nuts

Ingredients

  • 3 large red onions halved and sliced
  • 12 – 14 cherry tomatoes halved
  • 1 scant teaspoon dried oregano
  • 1/2 cup extra virgin Greek olive oil
  • 2 cups Greek yogurt
  • Finely grated zest of 1 lemon
  • Pure Greek Sea Salt
  • 4 garlic cloves minced
  • 1/2 cup very finely chopped fresh mint
  • ½ cup finely chopped fresh basil
  • ½ cup finely chopped fresh thyme
  • ½ cup finely chopped fresh parsley
  • ½ cup finely chopped fresh oregano
  • Salt and black pepper to taste
  • 1 pound bowtie pasta fiogkakia
  • 2/3 cups walnuts coarsely ground and toasted

Instructions

  1. Heat 2-3 tablespoons of olive oil in a skillet over low heat. Cook the onions until deep golden, about 15-20 minutes, stirring occasionally.
  2. Prepare the tomatoes by mixing them with dried oregano, salt, and 1 tablespoon of olive oil in a bowl. Set aside.
  3. Combine yogurt, all but 1 teaspoon of garlic, a pinch of salt, 2 tablespoons of olive oil, and lemon zest in a bowl. Stir well.
  4. Mix all fresh herbs together and set aside.
  5. Coarsely grind walnuts in a food processor and toast them in a dry skillet with half a teaspoon of garlic and a pinch of salt.
  6. Cook pasta in boiling salted water, reserving 2 cups of cooking liquid. Drain and toss pasta with 2 tablespoons of olive oil.
  7. Assemble the dish by placing pasta in a large bowl, topping with yogurt mixture, caramelized onions, herbs, and walnuts. Toss everything together and serve with marinated tomatoes scattered around the plate.
