
Stove-Top Greek Lemon Potatoes
These flavorful Greek lemon potatoes are a delightful side dish, combining the brightness of lemon with the richness of olive oil and herbs. Perfect for accompanying any meal.
Ingredients
- 2 pounds small new potatoes
- 3 tablespoons extra virgin Greek olive oil
- 1 tablespoon butter
- 1/2 cup dry white wine
- Juice of 1 large lemon
- Greek sea salt to taste
- 2 tablespoons fresh rosemary leaves or 2 teaspoons dried
- 2 teaspoons dried Greek wild thyme or oregano
Instructions

Place potatoes in a saucepan with olive oil, butter, wine, lemon juice, and salt. Bring to a boil, then cover and cook over high heat for 8 minutes.

Reduce heat and continue cooking for about 20 minutes to brown the potatoes.

Add herbs and cook for a few more minutes, stirring occasionally. Remove and serve
