I have made this dish in other versions, with my favorite Ikarian pine honey and fresh orange juice. Petimezi, the subtle, sweet syrup made by cooking down clarified grape must, is one of the world’s oldest natural sweeteners. In this dish, it lends balance to the already earthy beans and it pairs beautifully with tomatoes and herbs.

I am always looking out for new ways to serve Greece’s favorite beans, so love to serve classic Greek giant beans, aka gigantes (GHEE-ghan-des), grown in Feneos, in the western highlands of the Peloponnese, in a dish that echoes my Greek-American heritage, with pumpkin-pistachio–feta pesto. And, yes, those are Greek pistachios and they’re pretty amazing!

This Greek salad recipe is inspired by a classic Greek summer vegetable stew. On the Blue Zone Aegean island of Ikaria this vegetarian recipe is called mageirio. Elsewhere in Greece it is known as tourlou. I’ve taken the basic ingredients of green beans, tomatoes, onions, garlic and corn and transformed them into something lighter and more elegant, perfect for ...

There are so many choices now when it comes to pasta, that after a weight-watching hiatus I’m slowly starting to add it back to my diet, albeit in small quantities. Here is one of my favorite, easy Greek recipes for plant-forward, vegetarian pasta. I season my Greek primavera with wild Greek herbs and sea salt, which you can find ...

Mageirio, after the verb, to cook, “mageirevo,” is essentially an all-purpose summer stew, a kind of “throw-everything-in-one-pot,” dish that almost every home cook makes at least once a week, making use of everything that grows in her garden. This and the next recipe offer slight variations on the theme. If amaranth greens are unavailable, you can use any sweet ...

We've made our annual Easter sojourn to Ikaria, the Blue-Zone Greek island renowned for the longevity of its inhabitants. Here in Greece, schools get two weeks off, so we've already been here a few days and will stay through the whole "Lambro Evdomada," or "Bright Week," as the week after Easter is called.

This dish definitely elevates the whole concept of pork and beans! In Greece, hearty stews that combined meat and vegetables or beans, were a way to stretch a meal, providing a little animal protein to every member of the family, for example, while filling bellies on more economical raw ingredients such as chickpeas, an ancient legume in the Eastern ...

There are so many great recipes all over Greece for braised or baked giant beans, called gigantes. These butter, comforting beans marry well with everything from tomatoes to feta and spinach. This recipe is one of my favorites and may be served as an appetizer, vegetarian main course, side dish or meze. You can also enjoy it hot, warm ...

Fasolada, the classic Greek bean soup, comes in many regional variations. In Western Crete, for example, a few strips of orange zest are sometimes added to the soup as it simmers. In the north of Greece, where the palate is spicier, fasolada is often seasoned with boukovo (hot pepper flakes), or a couple of hot chile peppers. Mint and ...
