Mixed Berry Smoothie Bowl
Note: This can be breakfast, lunch or dinner! Think of healthy smoothies as the Mediterranean Diet on the go. You can switch out the milk for soy or almond milk, or even Greek yogurt or buttermilk.
Ingredients
- 1 cup fresh blueberries or mixed frozen berries
- 4-5 ice cubes
- 2-6 Tbsp coconut/ oat milk
- 1 Tbsp almond butter
- ½ cup of spinach
- 1 tsp raw Greek honey
- Kiwi slice for garnish
Instructions

Place the frozen berries, ice cubes, 2 tbsp coconut milk, almond butter and spinach in a blender. Blend until smooth, adding additional coconut milk if you do not want a thick smoothie. Taste and add raw honey. Blend again.

Pour into two bowls and top with blueberries and kiwi slice.
