Kale & Cabbage Slaw with Dried Fruits, Seeds & Nuts
This Kale & Cabbage Slaw with Dried Fruits, Seeds & Nuts is an easy, tasty and nutritious salad! Dried fruits, almonds and nuts add both flavor, texture and a lot of good nutritioun to this easy salad. Acai berriesGreece in the last few years, are loaded with antioxidants and contain many trace minerals and plant compounds. Hemp seeds are rich in protein and have high amounts of vitamin E, phosphorus, potassium, sodium, magnesium, sulfur, calcium, iron and zinc. Chia seeds are high in fiber and also contain quercetin, an antioxidant that can lower your risk of developing several health conditions, including heart disease. Flaxseeds are fiber-rich and are one of the best plant-based sources of omega-3 fatty acids, great for heart health.
Ingredients
- 6 ounces kale washed and chopped
- 6 ounces white and purple cabbage shredded
- 4 thinly sliced scallions
- 1/3 cup extra virgin Greek olive oil
- 1/4 cup apple cider or red wine vinegar
- 2 Tbsp Greek honey
- 1 Tbsp whole-grain Dijon mustard
- Sea salt and freshly ground black pepper
- 1 cup raw almonds, coarsely chopped
- 4 dried Greek figs, chopped
- 1/3 cup dried açai berries
- 1/3 cup dried currants
- 1/2 tsp hemp seeds
- 1/2 tsp chia seeds
- 1/2 tsp flax seeds
Instructions

Mix the kale, cabbage, scallions, almonds, and all the dried fruits together in a serving bowl.

In a separate, small bowl, whisk together the vinegar, olive oil, mustard and salt. Pour into the salad just before serving, toss, and serve.
