Greek-Style Baked Sardines with Lemon & Herbs
Sardines, one of the most popular fish in the Mediterranean, are exceptionally high in omega-3s. They also have the lowest levels of mercury of any fish. They contain a great source of calcium and Vitamin D, so they support bone health, too. So this humble fish isn't only delicious, it's deliciously good for you and inexpensive, too!
Ingredients
- 1/3 cup extra virgin Greek olive oil
- 1 large onion cut into very thin slices
- 1 kilo 2 lbs. fresh sardines, cleaned, gutted, heads removed
- 3 garlic cloves sliced thin
- Salt
- Juice of 1 large lemon
- 1 large lemon cut into slices
- ½ cup finely chopped parsley
Instructions

Preheat the oven to 180ο C (350350˚F). Oil an ovenproof glass baking dish large enough to fit all the sardines in one layer.

Strew half the onions in one layer on the bottom of the baking dish. Place the sardines on top in a very snug layer. Sprinkle with garlic, salt, and lemon juice. Place the lemon slices on top of the fish as evenly as possible. Strew with remaining onions. Drizzle with the olive oil and bake for 30 to 35 minutes, until the sardines are soft, the top layer of onions have darkened nicely and become crunchy. Remove, sprinkle with parsley, and serve.
