Greek Spinach-Kale Salad with Lime-Honey Dressing
I am always up for a great green salad, especially one like this Greek spinach kale salad with a few non-Greek additions, like edamame and lime! The honey adds a nice touch to the dressing and the salad is packed with fiber, filling, refreshing and perfect for any day of the week.
Ingredients
- 4 cups baby spinach
- 3 cups chopped kale
- 1 cup shelled raw edamame beans
- 2 scallions finely chopped
- 2 tablespoons chopped fresh dill
- Fresh strained juice of 1 large lime
- ¼ cup extra virgin Greek olive oil
- Sea salt to taste
- 1 tablespoon Greek pine or other raw honey
- 1 teaspoon Dijon mustard
Instructions

Coarsely chop the spinach and kale. Wash and spin dry, then place in a large mixing bowl. Add the edamame, scallions and dill.

Whisk together all the ingredients for the dressing, mix into the salad, and serve!

Note: You can also add a little crumbled Greek feta to this as well!
