
Cucumber in a Jar Salad
This refreshing salad is a delightful combination of thinly sliced cucumbers and red onions, marinated in a zesty Greek yogurt dressing. Perfect for a light lunch or side dish, it showcases classic Greek flavors in a unique and portable way.
Ingredients
- 1 large English cucumber thinly sliced
- 1/4 red onion thinly sliced
- 2-3 tablespoons Greek yogurt chilled
- 1 tablespoon honey
- 1 tablespoon lemon juice
- 1 garlic clove minced
- 1/4 teaspoon red pepper flakes
- 2 tablespoons fresh mint chopped
- 2 tablespoons fresh parsley or cilantro chopped
- Salt and black pepper to taste
Instructions

Slice the cucumber and red onion thinly and place them in a mason jar.

Add Greek yogurt, honey, lemon juice, minced garlic, red pepper flakes, chopped mint, and parsley into the jar. Season with salt and black pepper.

Seal the jar and shake vigorously until all ingredients are well mixed and the cucumber slices are coated in the dressing.
