Cauliflower Salad With Cabbage, Kiwi, Tomatoes, And Sprouts
KIWI NUTRITION FACTS: Kiwis are a great source of vitamin C, an effective antioxidant in the body, protecting cells against oxidative destruction. It’s also involved in immune function. Kiwis also contain a host of other nutrients and vitamins, including potassium, copper, vitamin K, folate, and vitamin E. Kiwis are low in calories, protein, and fat and are a good source of fiber.

Ingredients
- ⅓ cup extra-virgin Greek olive oil
- 2 Tbsp balsamic vinegar
- 1 Tbsp petimezi
- Sea salt and freshly ground black pepper
- 1 large head cauliflower chopped into small florets
- 2 cups cherry tomatoes halved
- 1 blood orange sliced
- 1 beefsteak tomato cut in thick slices
- 2 kiwis peeled,halved lengthwise, and cut into half moons
Instructions

Steam the cauliflower florets for 4-6 minutes. Strain and keep aside.

Whisk olive oil, balsamic vinegar, petimezi, salt, and pepper together until the dressing is smooth.

In a large bowl, mix together cauliflower, cherry tomatoes, and orange slices. Drizzle dressing over cauliflower mixture; toss to coat. Gently fold both types of tomato and kiwis into the salad.
