Ingredients

  • 12 large eggs at room temperature
  • Water
  • 2 tablespoons red wine vinegar
  • Onion peels skins from 10 – 12 large red onions
  • 1 teaspoon olive or other oil for shining the eggs

Instructions

  1. Add enough water to the pot to cover the eggs in one layer.
  2. Stir in the vinegar.
  3. Gently place the eggs in the water and cover with the onion skins. Cover and simmer for about a half hour, stirring gently about halfway through to be sure the eggs are fully submerged beneath and around the skins.
  4. Remove with a slotted spoon. Cool.
