Mediterranean Diet Lettuce Wrap
ABOUT LETTUCE WRAPS: Lettuce wraps are a great alternative to sandwiches between the bread, so to speak. While they’re traditional throughout Southeast Asian cuisine, they’ve actually been around a while in the West, too, as early as the late 19th century in the U.S. and UK.
Ingredients
- 4 large tender Romaine lettuce leaves
- 1 cup shredded cabbage
- ½ cup shredded purple cabbage
- 1 large carrot shredded
- 1 cup chopped arugula optional
- 2 pickled pepperoncini peppers or more, to taste. Seeded and julienned
- 8 cherry or teardrop tomatoes halved or quartered lengthwise
- 2 Tbsp chopped fresh oregano
- 2 Tbsp chopped fresh mint
- For the Dressing
- 2 tsp hot mustard powder
- 2 Tbsp Greek yogurt
- Grated zest of 1 lemon
- 1 - 2 Tbsp lemon juice to taste
- 2 Tbsp extra virgin Greek olive oil
- Sea salt to taste
- Greek Yogurt optional, to serve

Combine the shredded cabbages, arugula,if using, grated carrot, pepperoncini, tomatoes, and herbs in a mixing bowl. Season with a little salt.

Whisk together all the dressing ingredients and stir it into the salad filling.

Place the Romaine lettuce leaves in front of you and place a quarter of the salad on each of the leaves. Roll it up like a wrap, tucking in the ends so that the filling doesn’t fall out. Serve, with a small bowl of Greek yogurt on the side if you like.
